Vegetable Macaroni Salad


The beauty of vegetable salad depends on its seasoning and consistency. You do not need to have lots of vegetables in order to prepare this salad. Even if you have just four vegetables, which are easily available at home everyday, you can use them creatively to make a healthy and tasty salad.
Normally, people have tomatoes, potatoes, cucumber, and peas at home. The mixture of these four vegetables with a nice seasoning will make a perfect salad.



Ingredients:

1) Tomatoes - 2
2) Potatoes - 2 (small)
3) Cucumber - 1
4) Del Monte Pitted Black Olives (sliced) - 10 to 15 pieces
5) Del Monte Pitted Green Olives (sliced) - 10 to 15 pieces
6) Jalapeno (sliced) - 5 to 6 pieces
7) Peas - 100 grams
8) Corn - 100 grams
9) Macaroni - 100 grams
10) Red/Orange Carrot - 2 pieces
11) Basil - 6 to 10 leaves
12) Celery or Coriander
13) Broccoli
14) Zucchini
15) Mushrooms

It is not mandatory to use all the aforementioned vegetables. You can prepare this salad with as many number of vegetables you want. More vegetables in it, more healthy and tasty it will be.

Procedure:

First of all, boil Macaroni in a vessel for 15 minutes, and then cut all the vegetables, mentioned above, in to small pieces. Maintain consistency, that is, all the chopped vegetables must be of the same size. Need to boil following vegetables in the Microwave oven for 4 minutes:

a) Potatoes - If this does not get boiled in 4 minutes then boil it for some more time.
b) Broccoli
c) Peas
d) Zucchini
e) Mushrooms

Take a bowl and put all the chopped vegetables in it, including the boiled ones.

Seasoning:

Now we will prepare the seasoning or sauce. Gather the following items:

1) Curd
2) Tomato Ketchup
3) Del Monte Olive Oil
4) Oregano
5) Black Pepper Powder
6) Mayonnaise Sauce
7) Vinegar

Take a small bowl and put 4 tablespoons of curd in it. Add 2 tablespoons of Olive oil, 2 tablespoons of vinegar, 3 table spoons of Tomato Ketchup, and 2 tea spoons of Mayonnaise sauce in it. Whip it thoroughly, and then add Black Pepper & Oregano (as per taste) in it. You can also add white pepper as per your taste. Mix the aforementioned spices with the sauce.

Now bring the bowl of vegetables and add this sauce. Mix it properly and keep the salad in the refrigerator for 15 minutes.

And here you go. Your salad is ready. Garnish it with Celery & Basil and enjoy its taste.
